Idli/dosa is the major food for breakfast/dinner in South India. The batter for idli/dosa is same. With same batter we can make both IDLI and DOSA. We can also do many dishes out of this batter. KARA PANIYARM can also be made from this batter. After the usage of refrigerator this batter is available at any time in many of the houses in South India.
1.Idli rice – 4 cup
2.Urad dal – 1 cup
3.Fenugreek seeds – 1/2 tsp
4.Salt – 3 tbsp
1.Soak the idli rice along with fenugreek seeds for 3 hours.
2.Soak urad dal for 1 hour.
3.Grind the urad dal first.
4.Add the salt wile grinding.
5.Next grind the idli rice.
6.Mix both the batter together and transfer the batter in a vessel.
7.Allow it to ferment.
1.The batter differs as per the quality of the water, idli rice and urad dal.
2.If the urad dal doesn’t rises up well while grinding we can add more urad dal while soaking.
3.While grinding urad dal we should be careful in adding water.
4.The consistency of the urad dal batter should be in such a way that if we put back the batter it should not stick our hands.
