kolukatai With Coconut Stuffing Recipe – Ganesh Chathurthii Special

 INGREDIENTS

  1. Rice flour – 1 cup
  2. Oil – 1 tsp
  3. Jaggery – 1 cup
  4. Coconut – 1 cup grated
  5.  Cardamom powder – 1/4 tsp
  6. Ghee – 1 tsp
  7. Water – 1 1/4 cups
  8. Oil – 1 tsp

PROCEDURE

  1. In a kadai, heat water and oil.
  2. Add the rice flour little by little to the water-oil mixture.
  3. Stir it continuously to avoid lumps. Use a flat ladle or back of the ladle to get a homogenous mixture.
  4. Cook on low flame for 5 minutes stirring frequently. (Note -the quantity of water will differ from 1 cup -1 1/2 cup for 1 cup of rice flour depending upon the quality of rice)
  5. Transfer the dough to a plate. Allow it to cool.
  6. Take warm water mixed with 1-2 tsp of oil.
  7. Once the dough is warm, dip your finger in the water+oil mix and knead it to a smooth dough. If you feel that the dough is too dry, then sprinkle a little of that water+oil mixture and then knead the dough nicely.
  8. Cover it with a damp cloth, close it with a lid and keep it aside.
  9. Stuffing for the kozhukattai
  10. In a pan, heat jaggery and water in low flame. Turn off the stove once the jaggery melts completely.
  11. Filter it to remove the impurities.
  12. In a kadai, transfer the filtered jaggery water. Allow it to boil.
  13. Now add grated coconut and mix well.
  14. Add ghee to it and cook until it starts to thicken.
  15. Add cardamom powder and mix well. Turn off the flame.
  16. As the stuffing cools, it will thicken further. So you can switch it off a stage before that. See it that you can make balls out of it. If not cook for a few more minutes. Now the stuffing for kozhukattai is ready.
  17. When it cools a little, make small & even sized balls out of it and keep it aside.
  18. Now take the rice flour dough and make small balls from it. Work batch by batch as the rice flour will dry very quickly. (always keep the dough covered with a damp cloth to prevent drying)
  19. Grease your palms with oil, place a ball of dough on your palm and flatten it into a small circle . You can dip your fingers in the water+ oil mix, if needed to make it easier.
  20. Now place a ball of the prepared jaggery stuffing.
  21. Bring all the corners together and close it. Give it a nice kolukattai shape. Make them into ball or flat shaped kolukattai as per your wish.
  22. Repeat the process for all the rice flour balls.
  23. Arrange all the prepared Kozhukattais on a greased idli plate.
  24. Steam cook for 10-15 minutes or until done.Wait for 10 minutes to cool down and then remove it from the idly pan and enjoy!!
  25. Delicious Kozhukattais are ready.
