Protein Rich Oats-Spinach Kichdi Recipe

Kichdi is basic food in India. Here is a healthy and less oil version of kichdi. This protein rich kichdi is very tasty.

INGREDIENTS

  1.  Plain oats – 1/4 cup (50 gms)
  2. Split yellow moong dal – 3/4 cup (150 gms)
  3. Spinach – 1 cup (200 gms)
  4. Onion – 2
  5. Cloves – (2-3)
  6. Cinnamon stick – 1-inch piece
  7. Black Peppercorn – (4-5)
  8. Cumin seeds – 1 tsp
  9. Hing – ¼ tsp
  10. Red chilli – (3-4)
  11. Ginger – 1 tsp
  12. Water- 6 cups
  13. Oil – 1 tsp
  14. Turmeric powder – ½ tsp
  15. Salt – to taste

PROCEDURE

  1. Heat oil in a pressure cooker.
  2. Add cumin seeds, cloves, cinnamon stick and black peppercorns to it. Saute it for a few seconds.
  3. Next, add grated ginger, chopped onions and red chilli. Fry until onion turns translucent.
  4. Add oats and yellow moong dal along with 6 cups of water, turmeric powder, salt and spinach.
  5. Cook the khichdi for 1 whistle on high flame and  for 2 whistles on low flame. Turn off the flame and allow the pressure to escape by itself.
  6. Serve with roasted papad and raita.

NOTE

  1. Chopped garlic can also be added if preferred.
  2. Adjust the seasoning as per the taste.
  3. Coriander powder can be added for a flavour.
