Chow Chow/Chayote Gravy Recipe – For Rice & Roti

chow-chow-curry-23Chow chow has various health benefits it. Chayote is a roughly pear-shaped, mild flavored vegetable grown worldwide for its delicious seeds, roots, shoots, flowers, leaves and fruit. Almost all parts are consumed raw in the salad, boiled, marinated or fried.  It is a copper and vitamin B6 rich vegetable which is consumed worldwide to gain more benefits and remain healthy.

This chow chow grachow-chow-curry-21vy is easy to prepare. It goes well with rice and roti. The step by step pictorial procedure for the chow chow curry is as follows.chow-chow-curry-19

INGREDIENTS

  1. Chow Chow – 1
  2. Shallots – (8-10)
  3. Tomato – 1
  4. Garlic pods – 3
  5. Curry powder/kozhambu podi – 1/2 tbsp
  6. Cumin powder – 1 tsp
  7. Red chili powder – 1/2 tsp
  8. Turmeric powder – 1/4 tsp
  9. Salt – 1 tsp
  10. Hing/asafoetida – 1/4 tsp
  11. Mustard seeds – 1/2 tsp
  12. Split urad dal – 1 tsp
  13. Curry leaves – 1 sprig
  14. Coriander leaves – 3 sprigs
  15. Oil – 2 tbsp

PROCEDURE

  1. Wash and peel the skin of chow chow.chow-chow-curry-1
  2. Wash and cut it into 4 pieces. Remove the white part in the middle of chow chow.chow-chow-curry-2
  3. Chop it into small cubes.chow-chow-curry-4
  4. In a kadai, add water, salt and chow chow pieces.chow-chow-curry-5
  5. Cook till the chow chow becomes soft. Transfer it in a bowl and keep it aside.chow-chow-curry-6
  6. Heat oil in a kadai.chow-chow-curry-7
  7. Add mustard seeds and urad dal. Allow the mustard seeds to splutter and urad dal to turn light brown.chow-chow-curry-8
  8. Add chopped garlic. Saute it for few seconds.chow-chow-curry-9
  9. Now add chopped shallots to it. Saute till the shallots turn its color.chow-chow-curry-10
  10. Next add chopped tomatoes. Saute till the oil oozes out.chow-chow-curry-12
  11. Add curry powder, coriander powder, cumin powder, red chili powder, turmeric powder, hing, salt and curry leaves. Saute it for 2-3 minutes.chow-chow-curry-13
  12. Now add the water leftover after cooking chow chow. If required add some more normal water. Allow it to boil.chow-chow-curry-14
  13. Add the cooked chow chow pieces to it. Mix it well.chow-chow-curry-15

  15. Cook till the mixture thickens.chow-chow-curry-17
  16. Finally, garnish it with coriander leaves.chow-chow-curry-18
